I have company coming to visit this weekend, and I know ahead of time that my guest is on a low-carb diet.  As a graceful hostess (or at least someone trying to be one), I'm trying to plan meals that fit her diet, so my she will feel welcome but not tempted to splurge on my account.  Taking that little extra effort shows your guests how special they truly are, and that should always your #1 priority as a host.

I've been going through my binder of tested and approved recipes to see what dishes in my repritoire might work.  My husband and I particularly love this easy, oven-baked Denver omelet, so I'm excited to add it to my list.
